


The start of our annual goose dinner is always a special moment – a touch of familiarity that marks the beginning of the festive season. This year, we’re giving this cherished tradition a little twist. Some of you may know that we traveled through Mexico this spring – from the Pacific Coast, across Oaxaca, all the way to Mexico City. Along the way, we gathered countless impressions and flavors that we now want to bring to the table – alongside the goose.
Starting on St. Martin’s Day, November 11th, we’ll be serving our 4-course goose menu with an exciting Mexican touch. Dried ancho chilis and a rich mole sauce offer a fresh take on the classic roast goose, mezcal adds a delicate smokiness to the consommé, and seasonal organic citrus fruits from Italy – grapefruit, lime, and mandarin – bring brightness and freshness to the plate.
Of course, we’re staying true to our principles: seasonal, regional, mindful. No tomatoes in winter, no avocados, no coriander overload – instead, a winter composition that will surprise and, we hope, delight you.
