THE WHOLE GOOSE

This autumn we are again offering a goose dinner at Emma Metzler. From St. Martin’s Day we serve Odenwald pasture geese as a comprehensive menu with goose liver paté, goose consommé, lard and a crispy roast goose as the main course.

According to our motto nose to tail, or better beak to rump, we have put together a 4-course menu for which we process these wonderful animals holistic.

The geese come from the Bauer Mann from Klein-zimmern near Dieburg. There they grow slowly over seven months on a pasture with a lot of space and receive only turnips & Grain meal.

Sourdough bread & whipped pine needle lard
Nut butter waffle, rump laurel & foie gras pate

Goose consommé, lovage oil, baking peas, mountain ash &
pickled pear and J.B. Becker “old brandy”

Crispy roast goose glazed in coffee kombucha
Semolina dumplings, hay-flavored goose jus, candied clementine paste & grilled black cabbage

Poached honey quince, sour cream sorbet & chamomile sabayon

Eating geese from November 11th to December 23rd, 2022
